Duck with Vadouvan, Espresso, and Carrot

    Prepare the Duck

    Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt, black pepper, and vadouvan spice.

    Sear the Duck

    In a skillet over medium-high heat, add olive oil. Once hot, place the duck breasts skin-side down. Sear for about 6-8 minutes until the skin is golden and crispy. Flip and sear the other side for an additional 3-4 minutes. Remove from heat and let rest.

    Prepare the Carrots

    While the duck is resting, peel the carrots and cut them into thin strips or julienne. In the same skillet, add the carrots and sauté for about 5 minutes until slightly tender. Add honey and a splash of water, cover, and let steam for another 3-4 minutes.

    Make the Espresso Sauce

    In a small bowl, combine the espresso with a tablespoon of honey and a pinch of salt. Drizzle this over the seared duck just before serving.

    Serve

    Slice the duck breasts and serve on a plate alongside the sautéed carrots. Drizzle the espresso sauce over the duck and enjoy.
