Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

Soak the Potatoes
Place the potato strips in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

Drain and Season
Remove the fried potatoes with a slotted spoon and drain on paper towels. While still hot, season with salt, black pepper, smoked paprika, and chopped parsley.

Prepare the Smoked Crème Fraîche
In a small bowl, mix the crème fraîche with smoked sea salt and adjust seasoning to taste.

Serve the crispy potato fritti hot with the smoked crème fraîche on the side for dipping.
