Making the Sambusa

    Prepare the filling

    Rinse and cook the whole lentils in salted water until tender, about 20-25 minutes. Drain and set aside.

    Sauté the vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped red onions and sauté until translucent, about 5 minutes.

    Add garlic and jalapeno

    Stir in the minced garlic and chopped jalapeno, and cook for another 2 minutes until fragrant.

    Combine lentils and season

    Add the cooked lentils to the skillet, followed by the chopped parsley. Season with salt and black pepper to taste, and mix well. Cook for an additional 2-3 minutes to heat through.

    Assemble the sambusa

    Take a piece of sambusa dough, place a spoonful of the lentil mixture in the center, fold over, and seal the edges by pressing them together. Repeat with the remaining dough and filling.

    Cook the sambusas

    Fry the sambusas in hot oil until golden brown and crispy on all sides. Drain on paper towels before serving.
