    Prepare the Ingredients

    Chop the onion, mince the garlic, dice the jalapeno (removing seeds for less heat if desired), and chop the tomato.

    Marinate the Beef

    Season the beef ribs with salt and black pepper. Let them marinate for at least 30 minutes.

    Sauté the Vegetables

    In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and diced jalapeno, cooking for an additional 2 minutes.

    Cook the Beef

    Add the marinated beef ribs to the skillet. Cook for 10-15 minutes, turning occasionally, until the beef is browned on all sides.

    Add Tomato

    Stir in the chopped tomato and cook for another 5-7 minutes, allowing the flavors to meld together.

    Serve

    Serve hot with injera on the side, and spicy awaze and mitmita for dipping.
