1. Prepare the Meat
Clean and mince the lamb tripe, liver, and kidney thoroughly. Ensure that all pieces are uniform in size for even cooking.
2. Mix Ingredients
In a large mixing bowl, combine the minced lamb tripe, liver, kidney, and lean red meat. Add the diced onion, minced garlic, and minced jalapeño pepper.
3. Add Seasonings
Incorporate the herbal butter, ground cardamom, mitmita spice mix, salt, and black pepper into the meat mixture. Mix well until all ingredients are evenly distributed.
4. Cooking Method
Form the mixture into patties or leave it as is for larger servings. You can choose to serve it raw, or cook it to your preference (medium or well done) on a grill or in a skillet over medium heat for about 5-7 minutes per side for medium, or longer for well done.
5. Serve
Serve hot with your choice of side dishes or sauces.
