    Sauté the Aromatics

    In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until they are soft and translucent, about 5-7 minutes. Add the minced garlic and grated ginger, and cook for an additional 1-2 minutes until fragrant.

    Brown the Beef

    Add the chopped beef to the pot, seasoning it with salt and pepper. Cook until the beef is browned on all sides, about 8-10 minutes.

    Add Spices and Tomatoes

    Stir in the berbere spice blend and chopped tomatoes, mixing well to coat the beef. Cook for about 3-5 minutes to allow the flavors to meld.

    Simmer the Stew

    Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

    Add Carrots

    About 30 minutes before the stew is done, add the sliced carrots to the pot. Continue to simmer until the carrots are tender.
