Prepping the Vegetables

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until onions are translucent, about 3-4 minutes. Add sliced zucchini, diced bell pepper, grated carrot, and sliced mushrooms. Cook for another 5-7 minutes until vegetables are tender. Stir in fresh spinach and cook for an additional 2 minutes until wilted. Season with salt and black pepper to taste.
Preparing the Sauce

Mix the Sauce
In a medium bowl, combine tomato sauce and Italian seasoning. Mix well and set aside.
Assembling the Lasagna

Layer the Ingredients
Preheat the oven to 375°F (190°C). Spread a thin layer of tomato sauce at the bottom of a 9x13 inch baking dish. Place 4 lasagna noodles over the sauce. Spread a layer of sautéed vegetables over the noodles, followed by dollops of ricotta cheese, a sprinkle of mozzarella, and a drizzle of sauce. Repeat the layers two more times, finishing with a layer of noodles topped with remaining sauce and mozzarella cheese.
Baking the Lasagna

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden. Let cool for 10 minutes before slicing and serving.
