Focaccia Preparation

Activate Yeast

In a small bowl, combine the warm water, active dry yeast, and sugar. Stir gently and let it sit for about 10 minutes until frothy.

Mix Ingredients

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture along with the olive oil.

Knead the Dough

Mix until the dough comes together. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Dough

Once risen, punch down the dough and transfer it to a greased baking sheet. Stretch and flatten the dough to fit the sheet.

Second Rise

Cover the dough again with a damp cloth and let it rise for another 30 minutes.

Preheat Oven and Prepare Topping

Preheat your oven to 425°F (220°C). Use your fingers to create dimples all over the surface of the dough. Drizzle with olive oil and sprinkle with coarse sea salt and fresh rosemary if using.

In a medium bowl, combine the softened butter, honey, and sea salt. Use a hand mixer or whisk to blend until smooth and creamy.
