Wash and Cut Apples
Thoroughly wash the fresh apples under running water to remove any dirt. Cut them into quarters, removing the stems and any bruised spots.

Cook Apples
In a large pot, combine the quartered apples and 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

Mash Apples
After 30 minutes of cooking, use a potato masher or a wooden spoon to mash the apples to release their juices. Continue to simmer for an additional 10 minutes.

Strain the Mixture
Line a fine-mesh strainer or cheesecloth over another pot or large bowl. Carefully pour the apple mixture into the strainer, allowing the juice to drip down while pressing the solids to extract as much liquid as possible. Discard the solid apple remnants.

Simmer with Spices
Bring the spiced apple juice to a gentle boil, then reduce the heat and let it simmer for an additional 15 minutes to allow the flavors to meld.
