Beef Preparation

Season the Wagyu
Generously season the Wagyu beef with salt and black pepper on all sides.

Truffle Soy Glaze Preparation

Combine Ingredients
In a small saucepan, combine soy sauce, truffle oil, brown sugar, and mirin. Stir well.

Reduce the Glaze
Over medium heat, let the sauce simmer until it thickens slightly, about 5-7 minutes. Remove from heat and set aside.
Rice Preparation

Cook Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook according to the package instructions. Typically, combine rice with water in a rice cooker and cook until fluffy.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it is still warm. Let cool to room temperature.
Assembly

Press the Sushi
Line a sushi mold or a flat dish with plastic wrap. Place a layer of sushi rice in the bottom, followed by a layer of the torched Wagyu beef. Add another layer of sushi rice on top, pressing down gently.

Slice and Garnish
Remove from the mold and slice into bite-sized pieces. Top each piece with a drizzle of truffle soy glaze, a slice of jalapeño, and a sprinkle of chopped chives or green onions.
