Prepare Dumpling Filling

    Mix the Filling

    In a bowl, combine the shrimp, ground pork, minced garlic, grated ginger, chopped green onions, soy sauce, crushed Szechuan peppercorns, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Make Dumpling Wrappers

    Prepare the Dough

    In a mixing bowl, combine all-purpose flour and boiling water. Stir with a fork until the dough begins to come together. Allow it to cool slightly, then knead on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Roll Out the Dough

    Divide the dough into small pieces and roll each piece into a thin round wrapper on a floured surface, around 3 inches in diameter.

Assemble Dumplings

    Fill the Dumplings

    Take one wrapper, place about 1 tablespoon of the filling in the center, and wet the edges with water. Fold the wrapper in half to create a half-moon shape, pressing the edges to seal. Repeat until all fillings and wrappers are used.

Cook Dumplings

    Boil Dumplings

    Bring a large pot of water to a boil. Carefully add the dumplings (do not overcrowd the pot) and cook for about 5-6 minutes, or until they float to the top and the filling is cooked through. Remove with a slotted spoon and drain.

Prepare Serving Sauce

    Mix Sauce Ingredients

    In a small bowl, combine chili crunch and black vinegar. Stir well and set aside.

Serve

    Serve the Dumplings

    Place the dumplings on a serving plate, drizzle with the chili sauce, and top with chopped roasted peanuts and sliced green onions. Serve hot.
