Prepare the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, and cayenne pepper. Add the chicken tenders and let them marinate for at least 30 minutes.

Prepare the Coating
In another bowl, mix the flour and cornstarch together. Set aside.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the marinade and let the excess liquid drip off. Dredge each tender in the flour and cornstarch mixture until well coated.

Fry the Chicken
Carefully place the coated chicken tenders in the hot oil. Fry in batches for about 5-7 minutes or until golden brown and cooked through. Remove and let drain on paper towels.

Prepare Pimento Cheese
In a bowl, mix the pimento cheese with black strap molasses until well combined.

Slice the fresh jalapeños and serve them alongside the fried chicken tenders topped with the pimento cheese mixture.
