Bake the Brownies
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the brownie mix, eggs, water, and vegetable oil. Stir until well combined. Pour the mixture into a greased 9x9 inch baking pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let it cool.
Shape the Pops
Once the brownies are completely cooled, crumble them into a large bowl. Add in the chocolate chips and mix well. Form the mixture into small balls, about the size of a golf ball. Insert a lollipop stick into each ball and place them on a baking sheet lined with parchment paper. Refrigerate for about 30 minutes to firm up.
Coat with Candy Melts
Melt the candy melts according to package instructions. Dip each brownie pop into the melted candy, making sure it’s fully coated. Allow excess candy to drip off.
Add Sprinkles
While the candy coating is still wet, immediately sprinkle with colorful sprinkles. Place the coated pops back on the parchment-lined baking sheet and let them set until the candy coating hardens.
