    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 10-12 minutes or until tender. Drain and set aside.

    Sauté the Vegetables

    In a skillet, melt the butter over medium heat. Add diced bell pepper and sauté until softened, about 5 minutes. Add the boiled potatoes and cook for another 5 minutes, stirring occasionally. Season with salt and pepper.

    Assemble the Reuben

    Add the corned beef, sauerkraut, and Russian dressing to the skillet. Mix everything together and cook until heated through.

    Poach the Eggs

    In a separate pot, bring water to a gentle simmer. Crack the eggs into small cups and gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny.

    Toast the Bread

    While the eggs are poaching, toast the bread slices until golden brown.

    On each plate, place a slice of toast, top with the corned beef mixture, and finish with a poached egg on top. Serve immediately.
