Making the Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.

Turn the dough onto a floured surface and knead gently for about 30 seconds. Pat or roll out to about 1-inch thickness. Cut out biscuits with a biscuit cutter or a glass.

Place the biscuits on a baking sheet and bake for 10-12 minutes until golden brown.

Making the Gravy
In a large skillet over medium heat, cook the sausage until browned. Remove the sausage, leaving the drippings in the pan.

Stir in the flour and cook for 1-2 minutes until lightly browned. Gradually whisk in the milk and coffee, stirring constantly until the gravy thickens.

Season with salt and black pepper to taste. Return the sausage to the skillet and stir to combine.

Split the warm biscuits in half and ladle the sausage gravy over the top. Enjoy!
