    Mix the Dough

    In a large bowl, combine the active sourdough starter, water, and olive oil. Stir until well mixed. Gradually add the flour and salt, mixing until a sticky dough forms.

    Turn the dough out onto a lightly floured surface. Knead the dough for about 10 minutes until it becomes smooth and elastic.

    First Rise

    Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 4-6 hours, or until it has doubled in size.

    Shape the Rolls

    Once the dough has risen, punch it down to release the air. Divide the dough into 12 equal pieces and shape each piece into a roll. Place the rolls on a baking sheet lined with parchment paper.

    Cover the rolls with a damp cloth and let them rise for another 1-2 hours, or until they have doubled in size.
