Prepare the Pork Belly

Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season generously with salt and black pepper.

Sear the Meat

In a large, oven-safe pot, heat a bit of oil over medium-high heat. Place the pork belly skin-side down and sear until browned, about 5-7 minutes. Flip and sear the other side for another 5 minutes.

Add Flavorings

Remove the pork belly from the pot and set aside. In the same pot, add garlic, ginger, soy sauce, brown sugar, and water; stir to combine.

Braise the Pork

Return the pork belly to the pot, skin-side up. Bring the liquid to a simmer, then cover the pot and transfer it to the preheated oven. Braise for about 2.5 to 3 hours, or until the pork is tender.

Serve

Once cooked, remove the pork belly from the pot and let it rest for 10 minutes before slicing. Serve with the braising liquid and garnish with chopped green onions.
