Duck Preparation

Saigon Sauce

Method

Duck Cooking

1

Prepare the Duck

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

2

Sear the Duck

In a skillet, heat the vegetable oil over medium heat. Place the duck breasts skin-side down and sear for about 6-8 minutes until the skin is crispy. Flip the duck breasts and cook for another 4-5 minutes for medium-rare. Remove from the skillet and let rest.

Sauce Preparation

3

Make the Saigon Sauce

In the same skillet, drain excess fat, leaving about 1 tablespoon. Add soy sauce, honey, rice vinegar, minced garlic, ginger, chili flakes, and lime juice. Simmer for 3-5 minutes until slightly thickened.

Serving

4

Plate the Duck

Slice the duck breasts and arrange on a plate. Drizzle with the Saigon sauce and garnish with chopped cilantro and lime wedges.
