Directions
Prepare the Chicken
In a bowl, combine buttermilk and chicken breasts. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.
Breading the Chicken
In a shallow dish, mix flour, garlic powder, onion powder, salt, and black pepper. In another bowl, whisk the eggs. Place breadcrumbs in a third dish. Dredge marinated chicken in flour mixture, dip in eggs, and coat in breadcrumbs.
Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken pieces for about 5-7 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
Prepare the Aioli
In a bowl, mix mayonnaise, sun-dried tomatoes, and lemon juice. Stir until well combined.
Assemble the Sandwich
Slice the garlic bread baguette in half. Place a piece of fried chicken on the bottom half, top with mozzarella cheese, and drizzle with vodka sauce. Spread sun-dried tomato aioli on the top half of the baguette, then close the sandwich.
Serve
Cut the sandwich in half and serve immediately while hot.
