Prepare the Fish
In a bowl, mix the flour, cornstarch, baking powder, salt, and black pepper. Slowly add cold water until a smooth batter forms. Dip the mahi mahi fillets in the batter until fully coated.

Fry the Fish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the battered mahi mahi fillets. Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Slaw
In a large bowl, mix the shredded cabbage, chopped cilantro, and lime juice. Toss until well combined and set aside.

Assemble the Tacos
Warm the flour tortillas in a skillet or microwave. Place a piece of fried mahi mahi on each tortilla, top with cilantro lime slaw, pico de gallo, and a drizzle of jalapeno ranch dressing.

Serve immediately with lime wedges on the side.
