Method

Preparing the Veggie Patty

    Mash the Black Beans

    In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Mix in Veggies

    Add the corn, diced red bell pepper, chopped onion, and minced garlic to the mashed black beans. Stir until well combined.

    Add Dry Ingredients

    Stir in the oats, cumin powder, salt, and pepper until evenly mixed.

    Incorporate Binding Ingredients

    Add the egg (or flax egg) to the mixture and mix until everything is well combined. The mixture should be firm enough to hold its shape.

    Form Patties

    Divide the mixture into four equal portions and shape each into a patty.

    Cook the Patties

    Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown.

Assembling the Burger

    Toast the Buns

    While the patties are cooking, you can toast the burger buns on a separate skillet or in a toaster until golden brown.

    On each bottom bun, place a lettuce leaf, followed by a veggie patty, a slice of tomato, a slice of avocado, and cheese if using.

    Top with ketchup and mustard to taste, and then place the top bun to complete the burger.
