Prepare Strawberries

1. Slice the Strawberries

Wash the fresh strawberries under cold water, remove the green tops, and slice them into halves or quarters, depending on your preference.

2. Sweeten the Strawberries

In a medium bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Toss gently to coat the strawberries evenly. Set aside to allow them to macerate for about 30 minutes.

Make Shortcake

3. Preheat the Oven

Preheat your oven to 425°F (220°C).

4. Combine Dry Ingredients

In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 tablespoon of granulated sugar, and 1/2 teaspoon of salt.

5. Cut in Butter

Add 1/2 cup of unsalted butter (cold and cut into small pieces) to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

6. Add Wet Ingredients

Pour in 1 cup of heavy cream and 1 teaspoon of vanilla extract. Stir gently until just combined, being careful not to overmix.

7. Shape the Dough

Turn the dough out onto a floured surface and gently pat it into a rectangle about 1 inch thick. Cut into squares or rounds using a biscuit cutter.

8. Bake the Shortcakes

Place the shortcake pieces on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown. Remove from the oven and allow to cool.

Make Whipped Cream

9. Whip the Cream

In a mixing bowl, pour 1 cup of heavy cream. Using an electric mixer, beat on medium-high speed until soft peaks form.

10. Sweeten the Cream

Add 2 tablespoons of powdered sugar and 1/2 teaspoon of vanilla extract to the whipped cream. Continue beating until stiff peaks form.

Assemble the Strawberry Shortcake

11. Layer the Shortcake

Take one shortcake and slice it in half horizontally. Spoon some of the macerated strawberries onto the bottom half, followed by a generous dollop of whipped cream.

12. Top and Serve

Place the top half of the shortcake on top, and add more strawberries and whipped cream if desired. Serve immediately.
