Cake Base

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well combined.

3. Combine Wet Ingredients

In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

4. Combine Mixtures

Add the wet ingredients to the dry ingredients and mix until just combined. Carefully stir in the boiling water until smooth (the batter will be thin).

5. Bake the Cake

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool the Cake

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Chocolate Mousse

7. Melt the Chocolate

In a heatproof bowl, melt the chopped dark chocolate over a double boiler or in the microwave until smooth. Set aside to cool slightly.

8. Whip Cream

In another bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip.

9. Whip Egg Whites

In a clean bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar while continuing to beat until stiff peaks form.

10. Combine Mousse Components

Gently fold the melted chocolate into the whipped cream until combined. Then, gently fold in the whipped egg whites until no streaks remain.

Assembly and Garnish

11. Layer the Mousse

Once the cake has completely cooled, slice it in half horizontally. Place one layer on a serving plate and spread half of the chocolate mousse over it. Top with the second layer of cake and spread the remaining mousse on top.

12. Chill the Cake

Cover the cake with plastic wrap and refrigerate for at least 2 hours, or until the mousse is set.

13. Garnish and Serve

Before serving, garnish with chocolate shavings and fresh berries if desired. Slice and enjoy your delicious chocolate mousse cake!
