    Prepare the Protein

    Choose either Virginia ham, pork sausage, or scrapple. If using sausage, ensure it’s thawed if frozen. Cut the Virginia ham into slices and cut the scrapple into thick slices.

    Prepare the Eggs

    Crack the eggs into a bowl and beat them gently with a fork. Season with salt and black pepper to taste.

    Cook the Protein

    In a skillet, heat 1 tablespoon of butter or oil over medium heat. Add the Virginia ham or sausage links (or scrapple) and cook for about 4-5 minutes, flipping halfway through, until heated through and slightly crispy. Remove from skillet and set aside.

    Cook the Eggs

    In the same skillet, add a little more butter or oil if needed. Pour in the beaten eggs. Cook on medium-low heat, stirring gently with a spatula until the eggs reach your desired doneness (scrambled) or let them sit for sunny-side-up or over-easy (about 2-3 minutes).

    Plate the Dish

    Once the eggs are cooked, plate them alongside the protein of your choice. Garnish with additional salt and pepper if desired.
