Prepare the Vegetables
Dice the red bell pepper, green bell pepper, and onion into small pieces. Set aside.

Mix the Eggs
In a mixing bowl, whisk together the large eggs, milk, salt, and black pepper until fully combined and slightly frothy.
Cooking the Filling

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and onions. Sauté for about 5-7 minutes, or until they are soft and translucent.

Add Cheese
Reduce heat to low and add the cheddar cheese, monterey jack cheese, and cream cheese to the skillet. Stir until the cheeses are melted and combined with the vegetables. Remove from heat.

Add Filling
Once the edges are set, add the vegetable and cheese filling to one half of the omelette. Carefully fold the other half over the filling.

Cook for an additional 2-3 minutes, or until the omelette is cooked through and slightly golden.

Carefully transfer the omelette to a plate. Top with sliced avocado, a generous spoonful of salsa, and a dollop of sour cream.
