Preparation

    Generously season the porterhouse steak with salt and black pepper on both sides. Allow the steak to sit at room temperature for about 30 minutes to 1 hour before cooking, which helps it cook more evenly.

    Heat a large cast-iron skillet or grill pan over medium-high heat. Add the olive oil and let it heat until it shimmers but does not smoke.

Cooking

    Once the skillet is hot, carefully place the porterhouse steak in the pan. Sear for about 4-5 minutes on one side without moving it to develop a nice crust.
