    Place the salmon fillet skin-side down on a sheet of plastic wrap. Ensure the fillet is bone-free.

    Spread the salt and sugar mixture evenly over the salmon, ensuring it covers the entire surface. Add the fresh dill, cracked black pepper, and lemon zest on top.

    Wrap the Salmon

    Wrap the salmon tightly in the plastic wrap and place it in a shallow dish. This will help collect any liquid that seeps out during curing.

    Refrigerate the wrapped salmon for 48 hours. Turn the salmon every 12 hours to ensure even curing.
