Chicken Marinade

Marinating the Chicken

    Prepare the Marinade

    In a bowl, combine olive oil, paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt. Mix well to create a marinade.

    Marinate the Chicken

    Place the chicken breasts into the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

Cooking the Chicken

    Preheat the Grill or Skillet

    Preheat your grill or a skillet over medium-high heat.

    Cook the Chicken

    Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the grill or skillet. Cook for 6-7 minutes on each side or until the chicken is cooked through and has a blackened crust. Internal temperature should reach 165°F (75°C).

    Rest the Chicken

    Once cooked, remove the chicken from the heat and let it rest for 5 minutes before slicing.

Assembling the Salad

    Prepare the Salad Base

    In a large bowl, combine mixed greens, diced tomato, sliced cucumber, thinly sliced red onion, and sliced bell pepper.

    Top the Salad

    Slice the rested chicken breasts and place them on top of the salad. Sprinkle shredded cheddar cheese and croutons over the top. If desired, add sliced jalapeños.

    Toss the salad lightly if desired and serve immediately with your favorite dressing on the side.
