Preparation of Lox

    In a bowl, mix the sea salt and granulated sugar until well combined.

    Place the salmon fillet skin-side down on a large piece of plastic wrap.

    Evenly coat the flesh side of the salmon with the salt and sugar mixture. Make sure to cover the entire surface.

    Sprinkle the chopped fresh dill, crushed black peppercorns, and lemon zest over the salmon.
