Method
Preparation of Lox
- 1
Prepare the Cure
In a bowl, mix the sea salt and granulated sugar until well combined.
- 2
Prepare the Salmon
Place the salmon fillet skin-side down on a large piece of plastic wrap.
- 3
Apply the Cure
Evenly coat the flesh side of the salmon with the salt and sugar mixture. Make sure to cover the entire surface.
- 4
Add Aromatics
Sprinkle the chopped fresh dill, crushed black peppercorns, and lemon zest over the salmon.
- 5
Wrap the Salmon
Wrap the salmon tightly in plastic wrap, ensuring no air is trapped inside. Place it in a shallow dish.
- 6
Weigh It Down
Place a heavy object (like a cast iron skillet) on top of the wrapped salmon to help press the cure into the fish.
- 7
Cure the Salmon
Refrigerate the salmon for 24 to 48 hours, depending on how cured you want it. Check occasionally and baste with the juices.
Serving the Lox
