    Cook the Italian Sausage

    In a skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks. Once done, remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add olive oil and heat over medium heat. Add chopped bell peppers and onions. Sauté until they are soft and slightly caramelized, about 5-6 minutes. Remove from heat and set aside with the sausage.

Cooking the Omelette

    Prepare the Egg Mixture

    In a mixing bowl, crack the eggs and whisk them together. Add salt and black pepper, whisk until well combined.

    Combine Ingredients

    Add the cooked Italian sausage and sautéed vegetables to the egg mixture. Stir in the shredded mozzarella cheese until evenly distributed.

    Cook the Omelette

    Heat the skillet over medium heat again and add a little more olive oil if needed. Pour the egg mixture into the skillet. Cook undisturbed until the edges start to set, about 3-4 minutes. Then, gently lift the edges with a spatula and tilt the skillet to allow uncooked eggs to flow to the edges.

    Finish Cooking

    Once the top is almost set but still slightly runny, you can optionally cover the skillet with a lid to help it cook through. Cook for another 2-3 minutes until the center is firm and the cheese is melted.

    Serve

    Carefully slide the omelette onto a serving plate. Cut into wedges and serve warm.
