Corned Beef Hash Preparation

Melt Butter
In a large skillet, melt the butter over medium heat.

Add Corned Beef
Stir in the diced corned beef, salt, and black pepper. Cook for an additional 5-7 minutes until the beef is heated through and the mixture is slightly crispy.

Finish Hash
Remove from heat and stir in the chopped parsley. Set aside and keep warm.
Poaching Eggs

Prepare Water
Fill a large saucepan with water and bring it to a gentle simmer. Add the white vinegar.

Poach Eggs
Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny.

Making Hollandaise Sauce

Whisk Yolk Mixture
In a medium bowl, whisk together the egg yolks and lemon juice until the mixture is thick and pale.

Season Sauce
Season the sauce with salt and a pinch of cayenne pepper. Keep warm but do not overheat.
Assembly

Toast Muffins
Toast the English muffins until golden brown. Place half of a muffin on each plate.

Spoon the corned beef hash generously over each muffin half.

Top each muffin with a poached egg, then drizzle with the warm Hollandaise sauce.
