    Chop Vegetables

    Finely chop the red onion and bell pepper. Set aside.

    Prepare Gyro Meat

    If using leftover gyro meat, chop it into small pieces. If it's raw, cook it according to your preference.

Cooking the Omelette

    Beat Eggs

    In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk until well combined.

    Cook Vegetables

    In a non-stick skillet, heat the olive oil over medium heat. Add the chopped red onion and bell pepper. Sauté for 3-4 minutes until they begin to soften.

    Add Spinach

    Add the spinach to the skillet and cook for another 1-2 minutes until wilted.

    Incorporate Gyro Meat

    Add the chopped gyro meat to the skillet, stirring to combine with the vegetables. Cook for an additional 2 minutes until heated through.

    Add Egg Mixture

    Pour the beaten egg mixture over the filling in the skillet. Gently stir to distribute the filling evenly. Allow it to cook for about 5-7 minutes until the edges start to set.

    Add Feta Cheese

    Sprinkle the feta cheese evenly over the top of the omelette. Cover the skillet with a lid and cook for an additional 2-3 minutes until the eggs are fully set and the cheese is slightly melted.

Serving

    Plate the Omelette

    Carefully slide the omelette onto a plate. Cut it in half or quarters if desired.

    Garnish with additional feta cheese or fresh herbs if desired, and serve immediately.
