Preparation of Shrimp

Clean the Shrimp
Rinse the peeled and deveined shrimp under cold water and pat them dry with paper towels.

Sprinkle the shrimp with a pinch of salt and black pepper, and set aside.
Breading Process

Prepare Breading Stations
Set up three shallow dishes: one with flour, one with beaten eggs, and one with shredded coconut.

Bread the Shrimp
Dredge each shrimp in flour, dip them in the beaten eggs, and then roll them in shredded coconut until fully coated.
Frying the Shrimp

Fry the Shrimp
Carefully place the breaded shrimp into the hot oil, a few at a time, and fry for about 2-3 minutes on each side until golden brown.

Remove the fried shrimp from the oil and place them on a plate lined with paper towels to drain excess oil.
Sweet and Sour Sauce

In a small saucepan, mix together ketchup, white vinegar, sugar, soy sauce, cornstarch, and water.

Cook over medium heat, stirring constantly until the sauce thickens and comes to a simmer.
