Method

Prepare the Marinara Sauce

    Heat the Olive Oil

    In a medium saucepan, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic cloves to the heat and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasoning

    Pour in the crushed tomatoes, then add oregano, salt, and black pepper. Stir well.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Finish with Basil

    Stir in the chopped fresh basil just before serving. Remove from heat and set aside.

Prepare the Calamari

    Mix Dry Ingredients

    In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

    Prepare the Egg Mixture

    In another bowl, whisk together the eggs and buttermilk until well combined.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Coat the Calamari

    Dip the calamari rings into the egg mixture, allowing any excess to drip off. Then, dredge them in the flour mixture until fully coated.

    Fry the Calamari

    Carefully place the coated calamari in the hot oil in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes, or until golden brown.

    Drain and Serve

    Use a slotted spoon to remove the fried calamari and place them on a paper towel-lined plate to drain any excess oil. Serve hot with the marinara sauce.
