Method

Preparation

  1. 1

    Mash the Bananas

In a medium bowl, mash the ripe bananas with a fork until smooth. Set aside.

  2. 2

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Mixing

  1. 3

    Mix Wet Ingredients

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

  2. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix. Fold in the mashed bananas.

Cooking

  1. 5

    Heat the Pan

In a large skillet or griddle, heat the butter or oil over medium heat until hot.

  2. 6

    Cook the Pancakes

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook for an additional 2-3 minutes on the other side until golden brown.

  3. 7

    Serve

Remove the pancakes from the skillet and keep warm. Repeat with the remaining batter. Serve warm with additional banana slices and syrup if desired.
