Wash and Cut Potatoes
Thoroughly wash the russet potatoes under cold water to remove any dirt. Pat them dry with a clean towel. Cut each potato into long, thin strips, approximately 1/4 inch wide.

Soak the Potatoes
Place the cut potato strips in a large bowl filled with cold water. Allow them to soak for at least 30 minutes. This step helps to remove excess starch and makes the fries crispier.

Heat the Oil
In a large, heavy-bottomed pot or deep-fryer, pour in the vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a cooking thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels. Make sure they are as dry as possible to prevent oil splatter.

Fry the Potatoes
Carefully add a handful of potato strips into the hot oil, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove the fries and place them on paper towels to drain excess oil.

While the fries are still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste. Toss gently to ensure even coating.
