1. Prepare the Spinach

In a large skillet over medium heat, add 1 tablespoon of butter. Once melted, add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

2. Beat the Eggs

In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until well combined and slightly frothy.

In the same skillet, add the remaining tablespoon of butter over medium heat. Once melted, pour in the egg mixture, tilting the pan to spread it evenly. Cook for about 2-3 minutes, or until the edges start to set.

4. Add Spinach and Feta

Once the eggs are mostly set but still slightly runny on top, add the sautéed spinach and crumbled feta cheese on one half of the omelette.

5. Fold and Serve

Carefully fold the omelette in half using a spatula. Allow it to cook for another minute until the feta begins to melt and the omelette is cooked through. Slide onto a plate and serve hot.
