Preparing the shrimp

Season the Shrimp
In a bowl, season the peeled and deveined shrimp with salt and black pepper. Toss gently to ensure the shrimp are evenly coated.

Prepare the Breading Station
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Shrimp
Dredge each shrimp in flour, shaking off the excess. Dip it into the beaten eggs, and then coat it with panko breadcrumbs, pressing gently to adhere. Place the breaded shrimp on a plate.
Making the sauce

Combine Ingredients
In a medium saucepan, combine honey, Sriracha sauce, soy sauce, rice vinegar, minced garlic, and sesame oil. Stir well to combine.

Cook the Sauce
Heat the saucepan over medium heat until the mixture begins to simmer. Reduce the heat and let it simmer for about 5 minutes, stirring occasionally until slightly thickened. Remove from heat and set aside.

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes per side or until golden brown and crispy.

Drain and Toss
Using a slotted spoon, remove the shrimp from the oil and let them drain on paper towels. While still hot, toss the fried shrimp in the sweet and spicy sauce until well coated.
Serving

Plate and Serve
Transfer the firecracker shrimp to a serving platter. You can garnish with sliced green onions or sesame seeds if desired. Serve immediately while hot.
