    In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined.

    Add Shredded Coconut

    Stir in the unsweetened shredded coconut into the dry ingredient mixture, ensuring it is evenly distributed.

    Mix Wet Ingredients

    In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

    Combine Wet and Dry Ingredients

    Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

    Prepare Griddle or Pan

    Preheat a non-stick skillet or griddle over medium heat. Add a little butter to coat the surface.
