    Finely chop the onion, bell pepper, celery, and tomato. Mince the garlic cloves.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and chorizo sausage. Cook until browned and cooked through, about 7-10 minutes.
