    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into small cubes, about 1-inch in size.

    Boil the Potatoes

    In a pot, add enough water to cover the potato cubes and bring it to a boil. Add a pinch of salt and cook the potatoes for about 5-7 minutes until they're slightly tender but not fully cooked. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they are soft and slightly caramelized.

    Combine Potatoes and Seasoning

    Add the boiled potato cubes to the skillet with the sautéed onion and bell pepper. Sprinkle garlic powder, paprika, salt, and black pepper over the mixture. Stir well to combine all the ingredients.

    Fry the Home Fries

    Increase the heat to medium-high. Cook the mixture for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside.

    Once the home fries are crispy and golden, remove them from the skillet and serve hot as a delicious side dish.
