    Prepare the Grits

    In a medium saucepan, bring the water to a boil. Stir in the grits and reduce to a simmer. Cook for about 20-25 minutes, stirring occasionally until thickened.

    Add Milk and Cheese

    Once the grits are cooked, stir in the milk, cheddar cheese, and butter. Mix well until the cheese is melted and the mixture is creamy. Keep warm.

    Cook the Shrimp

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute.

    Add Tomatoes and Seasoning

    Add the canned diced tomatoes and cajun seasoning to the skillet. Stir well and let simmer for about 5 minutes.

    Finish with Shrimp

    Add the shrimp to the skillet and cook until they are pink and cooked through, about 3-5 minutes.

    Prepare Green Onion Remoulade

    In a small bowl, mix together the mayonnaise, sliced green onions, and lemon juice. Adjust seasoning with salt and pepper to taste.

    To serve, place a generous portion of the cheese grits on a plate, top with the shrimp and tomato gravy, and drizzle with the green onion remoulade. Serve with toast or a biscuit on the side.
