Beignet Preparation

    Make the Dough

    In a large mixing bowl, combine the flour, sugar, and salt. In a separate bowl, mix the milk, eggs, yeast, and vanilla extract. Melt the butter and add it to the wet mixture. Gradually combine the wet ingredients with the dry ingredients and mix until a sticky dough forms.

    Knead and Rise

    On a floured surface, knead the dough for about 5 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Beignets

    After the dough has risen, punch it down and roll it out to about 1/4 inch thick. Cut into squares or rectangles (about 2 inches wide).

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Beignets

    Carefully drop the dough squares into the hot oil, frying a few at a time. Fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

    Dust with Sugar

    While still warm, dust the beignets generously with powdered sugar before serving.
