Preparation Steps

    Prepare the Veal

    Season the veal cutlets with salt and black pepper on both sides. Let them rest for about 15 minutes.

    Set Up Breading Station

    In three separate bowls, place the flour, beaten eggs, and breadcrumbs. Dredge each veal cutlet first in flour, then dip in egg, and finally coat with breadcrumbs.

    Fry the Cutlets

    In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded veal cutlets and cook for about 4-5 minutes on each side or until golden brown. Remove from the skillet and drain on paper towels.

    Make the Sauce

    In the same skillet, add minced garlic and sauté for a minute. Then, pour in the white wine and lemon juice, scraping up any bits from the bottom. Allow to simmer for about 5 minutes until the sauce reduces slightly.

    Serve

    Place the fried veal cutlets on a serving plate, drizzle with the lemon and wine sauce, and garnish with chopped parsley.
