Directions

  1. 1

    Prepare the Base

In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion, garlic, and red bell pepper, and sauté until softened, about 5 minutes.

  2. 2

    Add Tomatoes and Spices

Stir in the diced tomatoes, saffron threads, and smoked paprika. Cook for another 5 minutes, allowing the flavors to meld.

  3. 3

    Add Rice and Broth

Add the arborio rice, stirring to coat. Pour in the chicken broth and bring to a gentle simmer. Cook uncovered for about 10 minutes.

  4. 4

    Add Seafood

Nestle the lobster pieces, shrimp, mussels, and clams into the rice. Cover the pan with a lid or aluminum foil and cook for an additional 10-15 minutes, until the seafood is cooked and the rice is tender.

  5. 5

    Finish with Peas and Parsley

Stir in the frozen peas and chopped parsley. Cook for another 2-3 minutes until heated through.

  6. 6

    Serve

Remove from heat and let it sit for a few minutes. Serve warm with lemon wedges on the side.
