Searing the Chicken
In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and sear for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Making the Sauce
Pour in the white wine and chicken broth. Add fresh thyme. Stir well and bring to a simmer. Allow the sauce to reduce for about 5 minutes.

Finishing the Dish
Return the chicken to the skillet. Cover and cook on low heat for 15-20 minutes until the chicken is cooked through. In a small bowl, mix cornstarch with water to create a slurry. Stir this into the sauce to thicken it. Cook for an additional 2-3 minutes.

Garnish with chopped fresh parsley before serving. Serve hot with your choice of sides.
