    Preparation

    Remove the Prime Aged Sirloin from the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking.

    Seasoning the Steak

    Pat the steak dry with paper towels. Generously season both sides with kosher salt and freshly ground black pepper. Rub the minced garlic and chopped rosemary into the meat.

    Searing the Steak

    Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering. Carefully place the steak in the skillet and sear for about 4-5 minutes on one side until a crust forms.

    Flipping the Steak

    Flip the steak and cook for an additional 4-5 minutes for medium-rare, or longer if desired. Use a meat thermometer to check for doneness (130°F for medium-rare).

    Resting

    Remove the steak from the skillet and let it rest on a cutting board for about 10 minutes. This allows the juices to redistribute.
