    Prepare the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on all sides. Remove and set aside.

    Add Sausage and Vegetables

    In the same pan, add chorizo and cook for about 2 minutes. Then, add the garlic and red bell pepper, and sauté until the pepper is tender.

    Add Rice and Seasonings

    Stir in the rice, saffron, and paprika, and cook for another minute to coat the rice in the oils and flavors.

    Combine Ingredients

    Return the chicken to the pan, and add the chicken broth. Bring to a simmer, and cook for about 10 minutes without stirring.

    Add Shellfish

    Add shrimp and mussels to the pan, cover, and cook for an additional 10 minutes until the mussels have opened and the shrimp are pink.

    Finish Up

    Stir in the green peas, season with salt and pepper to taste, and let sit for 5 minutes. Serve with lemon wedges.
