Prepare the Base
In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Create the Sauce
Pour in the tomato sauce, brandy, white wine, and fish stock. Add the paprika, salt, and black pepper. Stir well and let the mixture simmer for about 10 minutes to allow the flavors to meld.

Add the Shellfish
Carefully add the mixed shellfish to the pot. Cover and cook for about 5-7 minutes, or until the shellfish are cooked through and have opened up (discard any that do not open).

Garnish and Serve
Once cooked, remove from heat and sprinkle with fresh parsley. Serve hot with crusty bread or over rice.
