    Prepare the Clams

    Rinse the clams under cold water to remove any sand or debris. Place them in a bowl of cold water for about 30 minutes to help them purge any remaining sand. Afterward, drain and set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and chop into small pieces. Reserve the bacon fat in the skillet.

    Sauté the Vegetables

    In the same skillet with the reserved bacon fat, add olive oil if needed. Sauté the minced garlic, bell pepper, and shallots until softened, about 5 minutes.

    Combine Filling Ingredients

    In a mixing bowl, combine the sautéed vegetables, chopped bacon, breadcrumbs, parsley, salt, black pepper, and half of the Parmesan cheese. Mix until well combined.

    Stuff the Clams

    Preheat the oven to 375°F (190°C). Arrange the clams on a baking sheet. Top each clam with the filling mixture, pressing down slightly. Sprinkle the remaining Parmesan cheese on top.

    Bake the Clams

    Bake in the preheated oven for about 15-20 minutes, or until the clams are cooked through and the topping is golden brown.

    Serve

    Remove from the oven, let cool slightly, and serve warm with lemon wedges on the side.
